A flavouring composition which may be added to tomato soup or puree, comprises an edible oil or fat (e.g. butter, groundnut oil or hydrogenated groundnut oil) and the volatile flavour and aroma components of fresh tomatoes. The composition may be prepared by evaporating a pulp or juice derived from tomatoes and allowing the aqueous vapour to meet a film of oil or fat which extracts the flavour and aroma components from the vapour. Alternatively the aqueous vapour may be condensed and the resultant liquid mixed with oil or fat and the oily phase separated by centrifuging, or mixed with oil or fat above the m.p. of the oil or fat and cooled to allow the oil or fat to separate as a solid. |
