摘要 <p>PURPOSE:To obtain the titled mellow 'SHOCHU' (low-class distilled spirit), rich in flavor and having high palatability, by adding milk (processed substance) to unrefined SAKE (Japanese rice wine) during fermentation. CONSTITUTION:Milk or a processed substances thereof is added to unrefined SAKE for 'SHOCHU' of class OTSU (prepared by using a primitive still like pot still) during fermentation to afford the aimed SHOCHU.</p>
