<p>A composite frozen confection comprising ice confection in contact with a layer of fat-based confectionery composition comprising a suspension of sweetening and flavouring solids in an edible fat; characterised in that the edible fat comprises a fat composition having (a) solids content index (SCI) values (%) in each of the following ranges:
<UnorderedLists id="ula01" listStyle="none"><ListItem>70-93 at -20°C, preferably 80-93;</ListItem><ListItem>65-93 at -10°C, preferably 75-90;</ListItem><ListItem>55-90 at 0°C, preferably 70-90;</ListItem><ListItem>15-40 at 20°C, preferably about 20;</ListItem><ListItem>0-12 at 30°C, preferably 0-2;</ListItem><ListItem>0 at 35°C;</ListItem></UnorderedLists></p><p>(b) slip melting point in the range 23°-32°C, and</p><p>(c) a brittleness time of at least 45 seconds, preferably at least 60 seconds.</p> |
