<p>High-protein foodstuffs, esp. in the form of crisps (chips), are based on cheese, pref. comprising more than 50 (esp. 60-80) wt.% cheese and minor amts. of breadcrumbs or flour, esp. with 5-15wt.% starch as binder. The cheese can be a natural cheese (e.g. a soft cheese such as Camembert or cottage cheese), a processed cheese, a cream cheese, a whey-free milk coagulate, or a concentrate produced by ultrafiltration of milk. It can opt. contain spices and/or added lactose. The products have a high protein content without having the meaty taste of analogous meat-based products.</p> |
