The process comprises a short exposure to hyperfrequency or micro-waves. The step forms part of the normal prodn. process for such pastes and takes place in an oven disposed between the exit from the extruder and the tunnel drier. The appts. used comprises a system of mutually changing receiving trays, linear or rotating, which is synchronised with the oven so that each tray and contents are submitted to about 2,450 MHZ frequency and about 5 KW for about 1 min. The process is apparently applied to sausage type prods. and enables only a very short heating in water prior to consumption avoiding foaming or boiling over or agglutination of the pastes. |
