The steam skin on steam peeled potatoes is removed by putting the potatoes into a cylindrical vessel. The vessel has a set of vertically mounted brushes driven by electrical or hydraulic motors arranged around the wall. There is a rotating table with arms above it mounted at the base of the vessel. This serves to throw the potatoes against the brushes which then removes the skin in question. For removing the residual rubbery coating od partially cooked flesh when potatoes are peeled by a high pressure steam process. Allows this to be done directly after peeling in a way which does not cause environmental pollution and is economical.
