PURPOSE:Boiled soybeans are combined with gluten, wheat flour and soybean flour and they are formented to produce title 'natto' with high nutrition and good taste. CONSTITUTION:Sorted soybeans are washed with water, dipped in water for 10- 15hr and drained. Then, they are boiled and gluten, wheat flour and soybean flour are added to the boiled soybeans and when necessary, additionally chlorella and bone powders are admixed. The bacteria of 'natto' is inoculated to the mixture and the fermentation is effected. |
