Parent patent disclosed the prepn. of salmon substitute slices from cut, comminuted and salted haddock-like fish, e.g. sea-salmon, sea-pike or cod. In this addn. opt. dyed, shredded fish-meat or skinned fish fillets are first comminuted or shredded by minicing, undyed fish-meat is dyed, and the fish-meat is mixed at 15 degrees C with a mixt., (A), contg. =10% milk protein and =2% gelling agent and thickener. The blend is then mixed with a warm liq. phase, (B), at 40-50 degrees C, contg. gelatin, a pH-reducer to set pH 5 and increase preservative activity, preservative and flavouring agents. The prod. obtd. is shaped, cooled to 2-5 degrees C and cut into slices. Soft-flesh fish waste can be used to prepare sliced salmon substitute. The process allows mechanisation and automation. Packing of slices can take place by machine. |
