A process for the production of 1,2,6-hexanetriol from the dimer of acrolein (2-formyl, 3,4- dihydro (2H) pyrane) comprises a first stage wherein the dimer of acrolein is dissolved in an alcohol the olefinic unsaturation being removed by addition of the alcohol to the double bond, the alcohol being employed in excess, and a second stage comprising simultaneous hydrolysis and a catalytic hydrogenation of the product obtained in the first stage, obtaining the 1,2,6-hexanetriol by cleavage of the ring.
