PURPOSE:To prepare concentrated soup having rich flavor and taste, by separating fat-containing liquid soup into fats and oils containing flavor component and a liquid containing tasty component, concentrating the liquid at specific pH, and packaging the fats and the concentrated liquid. CONSTITUTION:One or more kinds of raw materials of soup, and if necessary fats and oils, are boiled in water once or more to obtain fat-containing liquid soup, which is then separated into fats and oils containing flavor component and a liquid containing tasty component. The pH of the latter liquid is adjusted to 4-7, pref. 4-6, and the liquid is concentrated to obtain a concentrated tasty liquid. The flavor-containing fats are optionally processed, and packed, together with or separately to the concentrated tasty liquid. |
