PURPOSE:To obtain an emulsion-type dressing resistant to separation of water during storage in spite of low viscosity compared with conventional dressing, by adding pullulan together with a gum in emulsifying process. CONSTITUTION:In the preparation of an emulsion-type dressing by conventional process, the raw material is compounded with about 0.1-1.0% (preferably about 0.2-0.6%) of a gum such as xanthan gum or carrageenan and about 1-20% (preferably about 3-6%) of pullulan based on the whole raw materials to be compounded. |
