1362276 Stabilized lactones UENO FINE CHEMICAL INDUSTRIES Ltd 24 Nov 1971 [25 Nov 1970 15 July 1971] 54622/71 Heading C2C [Also in Division A2] A process for preparing a stable solution of a lactone of aldonic acid or uronic acid comprises dissolving the lactone in at least one alcohol which is ethanol, propylene glycol or glycerol together with at least one salt which is an alkali metal salt, alkaline earth metal salt or ammonium salt of an organic acid or inorganic acid, or an acid addition salt of an amino acid, the solution containing at least 40% by weight of the alcohol. The solutions are useful as pH reducing agents for foodstuffs. Glucono-, arabono-, galactonolactones, mannolactone and xylonolactone are referred to, arabonogammalactone and gluconodeltalactone being preferred. In examples stable solutions in such alcohols are prepared of glucondeltalactone and sodium acetate, sodium propionate, sodium benzoate, potassium sorbate, potassium phosphate, sodium acetate, sodium inosinate, ammonium alum, calcium propionate, magnesium carbonate and lysine hydrochloride and of arabonogammalactone and sodium acetate. Lists of alternative organic and inorganic salts and of acid addition compounds are given. |
