1313417 Foods UNITED NATIONS CHILDRENS FUND BUEHLER AG Gebr and A BUFFA 5 June 1970 27431/70 Heading A2B A process for making human foods (e.g. infants' and dietetic foods) and animal feeds comprises mixing a starch-containing raw material, a high temperature resistant α-amylase and water to form an extrudable paste having a 30-50% by wt. moisture content, extruding the paste at 65-115‹C to obtain partial gelatisation and a priming of fermentation, treating the extruded product in a fermentation apparatus for up to 90 minutes at 55-90‹C in a high humidity atmosphere to convert the starch into dextrines and sugar (e.g. maltose, sucrose), and drying the product (e.g. at 85-100‹). The product may be sterilised during the drying. The drying operation may comprise a preliminary stage to deactivate the enzyme. Water and steam may be added to the extruded product before or while it is in the fermentation apparatus. The pH of the paste may be controlled before extrusion by the addition of additives. The mixing may be done in a heated mixer. The dried product may be ground and mixed with additives, e.g. sugar, protein, powdered milk, vitamins, aminoacids and mineral salts. The paste may comprise flour, meal and grits of cereals, pulses, starch roots, tubers and oil seeds, milk products, vitamins, mineral salts, aminoacids and a gluco-amylase. The fermentation and drying devices may comprise vessels in which are mounted a plurality of superimposed conveyor belts. |
