A method for fixing volatile flavoring compounds such as acetaldehyde comprises preparing a solution comprising sucrose, water and volatile flavoring compound at a temperature at least sufficient to obtain complete solution under an elevated pressure sufficient to prevent flash-off of the volatile flavoring compound; cooling and agitating the solution to transform it into an opaque paste; and preferably mixing the paste with a dry particulate material prior to drying to a stable moisture content. The dry particulate matter may be sucrose. Tricalcium phosphate may be present. |
