A meat (including fish and poultry) product comprises a chilled raw meat body containing a congealed edible fat having admixted therewith a water soluble flavouring material, the fat being in the continuous phase, such that on cooking the flavouring material is released and allowed to come into contact with the meat and its natural juices. Suitable flavourings include lemon, onion, smoke, butter, pepper, beef, vegetable protein, sodium chloride, monosodium glutamate, disodium inosinate, and disodium guanylate. The fat containing the flavouring may be injected into the meat. |
