PURPOSE:To obtain a fibrous food material having the quality not inferior to that prepared through spinning, in high yield, in a less expensive device, continuously and with good productivity, by drawing a raw material mixture of specific composition in a specific aqueous solution. CONSTITUTION:A hydrous mixture with a moisture content of 50-80% comprising wheat protein (W), e.g., raw or active gluten, and meat (M), e.g. cattle, chicken, fish, or mollusk meat, at a solid content ratio of 3:7-10:0, is kneaded with 0.2- 2.0% of a polysaccharide, e.g. carboxymethyl or carbamylethyl starch or carboxymethyl cellulose, and 0.5-20% of common salt. The kneaded material is then heated in a 0.3-20% aqueous solution of an alkali (earth) metal salt, e.g. NaCl or CaCl2, at 85-98 deg.C while being drawn at a ratio of 3-15:1. |
