发明名称 METHOD OF MAKING FERMENTED PICKLES
摘要 <p>PURPOSE:During making fermented pickles, the squeezed juice or extract of dogtooth violet by organic solvent is added to the pickle solution to prevent the production of harmful film-forming yeast and accelerate the lactic acid fermentation, thus making said fermented pickles with high storability. CONSTITUTION:During making fermented pickles, the squeezed juice or extract of dogtooth violet by organic solvent is added in an amount of 0.002-6, preferably 0.02-0.6wt%, calculated as dried dogtooth plant based on the total pickls solution. As the bodies of dogtooth violet plant, any of leaves, subterranean stems, fruits may be employed; however, the use of leaves is preferred from the view point of amount. The extract is prepared by adding water and/or organic solvent to dried dogtooth violet plant at a weight ratio of 5-20:1 and heating at 20-100 deg.C for 10min-5hr.</p>
