摘要 Mass for making instant dumplings comprises (wt pts)wheat grits, wheat flour of good feel, breadcrumbs etc. 50-83 fat 10-30; powdered protein 5-15; an acid component(esp Na pyrophosphate) 0.9-2.7, and NaHCO3 0.65-2. Compsn may also contain (per 100 wt pts of the above mixt) up to 3 wt pts each of NaCl, powdered egg yolk or condiments; up to 2.5 wt pts Na glutamate and up to 30wt pts meat or cheese. Dumplings have the same flavour and structure as home made one; are cooked with 10min but retain their structure if cooked for longer; can be packaged and transported in the dry state without crumbling and remain usuable for >=1 yr.
