In a process for the treatment of food in a pressure cooker, steam is introduced from a steam generator into the cooker in which an outlet valve is kept open for a certain initial period. Depending on the kind of cooking process the valve is kept open continuously for a period of 2 min. or in pulses for a period of 3 min. This removes the air, which is present in the pressure cooker, in the shortest time and with the minimum energy consumption. It ensures a very uniform temp. distribution in the pressure cooker. |
