1473036 Dried potato flakes PFANNI WERK OTTO ECKART KG 6 June 1975 [14 June 1974] 24413/75 Heading A2B Dried potato flakes which can be reconstituted with boiling water are prepared by cooking potatoes forming a puree spraying the puree with an aqueous suspension containing 9-45% by wt. of solids of whey protein having low lactone content and/or egg albumin to incorporate 2-12% by weight thereof and drying the puree. One or more emulsifiers, cysteine, full milk or skim milk or mixtures thereof may be added in addition to the puree before drying, preferably in the sump of the fourth application roller of a conventional roller drier having five application rollers, the count being made in the direction of the drying roller. The potatoes may be precooked cooled then fully cooked. A heat treatment prior to precooking may be given. |
