<p>Fresh tomatoes are first deep frozen, e.g. to about -30 degrees C, to make them firm enough to peel mechanically. The frozen tomatoes are conveyed to and through a brushing machine and then onwards to and through an abrasive peeling machine. Following inspection, the peeled tomatoes are passed through another freezing stage pref. via a freezing tunnel, to compensate for the slight heat gain in the brushing and peeling stages. Process enables deep frozen peeled tomatoes to compete in price with canned tomatoes which cannot offer the same taste and texture annd whose flavour is affected with preservatives.</p> |
