Process for producing a novel foodstuff, that is a simulated dough snack product and a semi-manufactured product therefor, by mixing a dehydrated potato product with ungelatinised starch and water, extruding this mixture under pressure and temperature conditions under which partial gelatinisation of the starch takes place, slicing and subsequent drying of the extruded product to form a semi-manufactured product and, if required, subsequent cooking of the semi-manufactured product by boiling, frying or baking. |
