PURPOSE:To obtain a low-calorie sweetener having decay resistance industrially and efficiently by cultivating a bacterium, belonging to the genus Pseudomonas in a medium containing xylose and sucrose under an aerobic condition. CONSTITUTION:Xylose is blended with sucrose in the weight ratio of (1-10):(10-1) at 1-20wt.% each concentration and further peptone, phosphate, etc., to prepare a medium. Then Pseudomonas cepacia is inoculated into the medium and aerobically cultivated at 20-37 deg.C for 1-7 days to give a culture mixture. Then the culture mixture is centrifuged, the prepared supernatant liquid is purified by sellaite column, etc., to produce Xylosucrose. Optionally a solution containing xylose and sucrose is reacted with cells of a bacterium belonging to the genus Pseudomonas or a treated substance of the cells at pH about 7 at about 30 deg.C for about 20 hours to give a reaction product. Then the reaction product is centrifuged and purified by chromatography to produce xylosucrose. |
