PURPOSE:To obtain a quickly cookable pregelatinized rice with hardly any half cracked or checked rice by previously providing steps for lightly hulling and polishing unpolished rice, spraying water thereon, increasing moisture content of rice by a specific value, as necessary, hulling and polishing the rice, respraying water, increasing moisture content by a specified value, then conditioning and aging the resultant rice. CONSTITUTION:Unpolished rice is lightly hulled and polished, sprayed with water to increase moisture content thereof by 1-1.5%, as necessary, hulled and polished (unnecessary if sold in the state of the unpolished rice) and resprayed with water to increase the moisture content by about 1%. The resultant rice absorbing water is then conditioned and aged at 10-38 deg.C (sufficient simply by allowing to stand for about a night to a whole day and night) and further dipped in water for 30min-2hr to absorb water and increase the moisture content. The obtained rice is subsequently irradiated with microwaves. |
