<p>The invention includes a method and apparatus for the concentration of a liquid comprising coffee extract, tea, beer or citrus fruit wherein the liquid is subjected to freeze concentration to form ice in the liquid, the liquid and ice are fed to a centrifuge which separates the concentrated liquor from the ice but produces also a foam, the foam is separated from the ice and liquid and further treated so as to be included in the final concentrated product.</p> |
