A stuffed pancake is both folded and rolled before being dipped in beaten egg white and covered in breadcrumbs. This makes it possible for the pancake to witstand a temp. of 150 degrees without bursting and without the filling escaping. The pancake may be round, square or oval, and is folded on three sides before being pasted with egg yolk, the pasted surface being pressed as it is rolled to bring about adhesion, before the rolled pancake is dipped in beaten egg white and coated in breadcrumbs. |
