The device for extracting, by suction, the blood from the body of slaughtered animals comprises a tool composed of two tubular elements, one (14) of which is equipped with a blade (22) and the other (15) of which is connected to a container. The tubular elements (14, 15) are connected to each other by means of two arms (18) which are fastened to the element (14) by pivots (20) oriented transversely with respect to the curve of the flanges (16, 17). They thus permit a relative angular displacement of the elements (14, 15) between a position of connection of their bores end to end, corresponding to suction, and a position of interruption of this connection and thus of suction. <IMAGE>
