In the filtration of high-value liquids, such as beverages, hitherto, the high-value liquid has been displaced from the filter by water, which led to the known blending losses. The present method avoids these blending losses by omitting the displacement by water and forcing out the high-value liquid from the filter after the completion of the filtration process using compressed gas, that is either only into the feedline or partly into the feedline and partly into the discharge line of the filter. Since during this forcing out process, falling off of the filtration residues from the filter surfaces into the unfiltered liquid to be forced out must be avoided, because such filtration residues which have fallen away would have to be filtered out once more in the next filtration process, a special process technique is used in order, during the forcing out process, firstly to constantly maintain a pressure drop from the unfiltered liquid space (1) to the filtrate space (14) of the filter and secondly to ensure that the unfiltered liquid space (1) becomes empty before the filtrate space (14), for which the filtrate space (14) is emptied via a throttled connection line (23) which slows the discharge rate. <IMAGE>
