An emulsifying compsn. comprises a mixt. of phosphatidylcholine and phosphatidyl-N, N-dimethyl ethanolamine in ratio of from 20:80 to 80:20 pref. from 70:30 to 40:60 by wt. The emulsifier is prepd. by mixing the synthesised phosphatidyl-N, N-dimethyl ethanolamino with a phosphatidyl dyl choline fraction isolated from natural animal or vegetable sources and opt. contg. lipids or phospholipids. Alternatively an animal or vegetable phosphatide contg. phosphatidyl-ethanolamine or an enriched fraction is reacted with a methylating agent until the desired phosphatidyl choline/phosphatidyl N, N-dimethyl ethanolamine ratio is obtd. or until phosphatidyl N, N-dimethyl ethanolamine is formed followed by quaternising a part of the product to phosphatidul-choline. The emulsifiers are used in foods, cosmetic and pharmaceutical products. C.f. completely natural products the above are more reliable in giving uniform emulsifying properties and also are as satisfactory in forming oil in water emulsions as with water-in-oil emulsions. |
