PURPOSE:To obtain yeast bodies capable of producing catalase, having a high potency, and useful for fields of medicines and food, etc., by subculture of the yeast bodies in a culture medium containing hydrogen peroxide. CONSTITUTION:A yeast, e.g. baker's yeast or beer yeast, preferably belonging to the genus Saccharomyces, Candida or Mycotorula is subjected to subculture in a culture medium containing hydrogen peroxide and further preferably iron added thereto. Thus, the aimed yeast bodies capable of producing catalse having a high potency are obtained. The concentration of the hydrogen peroxide to be added is preferably about 0.1-2% in the initial period, and increased in each subculture in order. Iron sulfate, iron chloride, etc. may be used as the iron, and the amount thereof to be added is preferably several mg - some ten mg based on 1l culture medium in general. The catalase having a high potency is obtained by collecting a catalase fraction from the cultivated yeast bodies by a method of cell disruption, extraction, etc. |
