摘要 <p>The cabinet contains horizontal shelves on which the dough pieces are supported while the interior of the cabinet can be cooled and heated by circulation of a heat transfer fluid. The temp. of the fluid is regulated in a heat exchange unit outside the proving chamber. Each of the horizontal shelves is made as a heat exchanger plate supported by two vertical side members of the cabinet. Each side member serves as a flow manifold, one supplying heat transfer fluid to the shelves while the other collects the fluid for recycling via the external, heat exchange unit. The shelves are pref. adjustable in height on the side members, flexible hose leads being used to connect the shelves to the flow manifolds of the side members. There is no contact between the prod. and the heat transfer fluid. This avoids the premature superficial crusting, produced by air circulation temp. control, which can impede subsequent fermentation and cooking. The shelf spacing is readily adjustable.</p>
