<p>Domestic appts. for the prepn. of fresh, or unfermented, cheese, consists of a container with a lid and fitted with a heater; it encloses a first cheese mould which is perforated to allow for the drainage of the whey. This itself encloses a second perforated cheese mould. The two moulds consists of cones with their smaller bases resting on the bottom of the container. The second mould is fitted with a vertical handle so that it can be withdrawn from the appts., together with the cheese it contains, without altering its appearance or flavour. The outside container has a double wall; this forms a reservoir for hot water and acts as a water bath. The appts., fresh cheeses can be made by anybody; they remain in their moulds until mfr. is complete and no transfer to another vessel is necessary. The second mould is fitted with vertical partitions so that several cheeses can be made at a time.</p> |
