Between successive vacuum actions air or nitrogen and/or carbon dioxide optionally under pressure may be injected into the vessel to provide a scavenging action for the oxygen. The pieces of flesh may be prepared by subjecting them to a kneading or churning step under vacuum prior to placing them in the vessels. Suitably the vessels are sealed by placing a flexible lid of gas tight material on the vessel followed by a rigid cover, suitably perforated. |
