1443513 Proteinaceous food UNILEVER Ltd 3 Oct 1973 [3 July 1972] 31041/72 Heading A2B A solid thermostable aqueous gel based on propylene glycol alginate having subdivided animal protein, in particular fish protein, which may be substantially denatured, dispersed therein, may be prepared by mixing the subdivided protein at a pH above 7 with the aqueous alginate and allowing the mixture to set. The product may be extruded, and setting facilitated by contacting with an aqueous alkaline solution. When fish protein is employed, the product may be mixed with comminuted fish muscle and used, for example, in fish fingers. Other protein sources include crustacea, animal and poultry muscle, milk and eggs. |
