The product may be extruded, and setting facilitated by contacting with an aqueous alkaline solution. When fish protein is employed, the product may be mixed with comminuted fish muscle and used, for example, in fish fingers. Other protein sources include crustacea, animal and poultry muscle, milk and eggs.
