<p>1461998 Imitation meat PROCTER & GAMBLE CO 26 Aug 1975 [27 Aug 1974] 35191/75 Heading A2B A meat-like material is made by forming an aggregate of substantially parallel protein fibres and a binder, setting the aggregate, passing the set aggregate between rollers at a distance apart from each other of # to 1/10th of the thickness of the aggregate and finally drying. The aggregate may be dried to a moisture content of from 0% to 20% by weight. The binder may be heat-coagulable (e.g. egg albumen, or a mixture of albumen, gluten and de-fatted oil seed) and the setting step carried out by heating. The protein may be any vegetable or animal protein and may comprise 30 to 100% by weight of the aggregate on a dry basis. Other ingredients may be fats (in amount -up to 50% by weight) preservatives, colourings, flavours, emulsifiers, stabilisers, binders and vitamins.</p> |
