Prodn. of banana crisps is carried out by removing the skins from unripe green bananas, cutting the bananas into thin slices, pref. approx. 2 mm. thick, cooking the slices in hot fat with a temp. of 175 degrees, pref. for 4-5 mins., then adding flavouring, e.g., salt, paprika, powdered sugar, etc. This method allows direct utilisation of raw bananas without waiting for them to ripen as is the case with banana flakes and banana powder. Also the banana chips absorb considerably less fat and are therefore highly digestible compared with potato crisps, requiring low-cost starting materials for their prodn. |
