Sausage skin consisting in known manner of a textile mesh fabric opt. with a coating or impregnation, in which the fabric contains peripherally running yarns in addn. to the mesh yarns. Gives dimensional stability and elasticity to the mesh-type sausage skin and permits peripheral tearing away of the skin in peeling the sausage as well as allowing the use of coating media giving long storage life.
