Egg opener with a sprung holder for the egg and with a ring-shaped sawing knife which has a movable bearing and is capable of turning round its own axis. The sawing knife (5) with bearing on a base plate (3) is positioned below a support and centering ring (12) which holds the top of the egg pointed downwards. The support and centering ring is capable of an axial sprung adjustment in relation to the sawing knife. The egg opener also includes an upper bearing plate (16) which fits over the sawing knife (5) and which has a vertical adjustment on a side guide against a clamping spring (23).
