1347415 Treating fluids NESTLE SA 25 Feb 1972 8853/72 Heading A2D Heat treating fluids comprises heating the fluid in a confined zone to a temperature in excess of its boiling temperature at a preselected pressure below the pressure existing in the confined zone, exposing the preheated fluid to the preselected pressure whereby its temperature is lowered to its boiling temperature, thereafter feeding the fluid, at a constant flow rate and constant temperature, to a heating zone supplied with a heating medium at a constant rate whereby the fluid is heated to a predetermined and constant final temperature, and maintaining the fluid at the final temperature for a predetermined period of time. The fluid may be preheated by steam injection, and heated to the final temperature by indirect heat exchange with steam. The treatment is applicable to the heating of milk, soups, sauces, desserts and baby foods. The treatment may be carried out in the system shown schematically in the figure wherein fluid is withdrawn from reservoir 1 and preheated in 5. The preheated fluid passes along line 7 via back pressure valve 8 to an expansion chamber 9 wherein evaporation of part of the water content of the fluid and release of gases and volatile substances occurs. The fluid passes on to a heater 17 which is fed at a constant rate through line 19 with a heating medium. The heated product then passes to a holding section 26, cooling section 27 in the form of a heat exchanger and thence to a storage reservoir 29. The system is provided -with 3-way taps 39, 40 and 46 to facilitate flushing of thereof with, e.g. Water and inerts. In this way the system may be cleaned and serilised. |
