A sausage consists of sausage meat enclosed by a skin, and having a central region filled with a pulp or sauce flavouring which can permeate into the sausage meat. Filling is done by unfastening the skin at one end and inserting a tubular nozzle to make a hole through the sausage. The filling material is injected through the nozzle as it is withdrawn. |
