Disclosed is a method for producing a beverage. Said method comprises at least the following steps: a vegetable whey is filtered to obtain a serum, e.g. the soy whey obtained during the production of tofu is filtered to obtain clear soy serum, especially in an ultrafiltration process; a beverage is produced from said serum.
