<p>The vessel is formed as an elliptical cylindrical annulus, with horizontal annular axis and the major axes of the internal and external ellipses being inclined at (different) angles to the vertical. The upper part is truncated and joined to a vertical cylindrical disengagement space. The wort being heated circulates around the annulus, either purely by convection or with the help of impellors. The result is a more even cooking.</p> |
