The Kimchi spice is prepd. by (a) cutting radish into fine strips, (b) adding 3-5 % edible salt into the obtd. thin strips of radish and dehydrating by centrifuging, (c) mixing the dehydrated thin strips of radish with sliced vegetables, (d) re-mixing the obtd. mixt. with garlic, ginger, roasted sesame, red pepper powder, pickled fish juice, glutinous powder, condiment and edible salt, and (e) fermenting the re-mixt. in the cool and dark place and sterilizing at 80-85 deg.C for 20-25 min. to obtain the final product. |
