PURPOSE: Sterile processed meat products using a pig head and a manufacturing method thereof are provided to inexpensively produce processed meat products for a consumer after removing bones, foreign materials, and fat from the pig head. CONSTITUTION: A manufacturing method of a sterile processed meat product using a pig head includes the following steps: pre-processing the pig head; forming the flesh of the pig into a roll shape; freezing and storing the flesh of the pig head; thawing the flesh; dipping the flesh in water in which salt, brown sugar and pepper are mixed; drying the flesh without the salt; smoking the flesh after binding the flesh with a thick thread; and packing the flesh.
