<PICT:0905607/IV (b)/1> A process for the production of a proteinaceous product from a protein containing material having a fat content and also having a water content of 20% or greater comprises treating the material in counter current flow with one or more organic solvents, or a mixture of such solvents, capable of mixing with water and of dissolving fat, and having a boiling point below that of water such that the outgoing extraction liquor from the treatment exists in two separate phases, one phase containing substantially all the water and the other phase containing substantially all the fat. The temperature of the solvent e.g. acetone, may be higher than the melting point of the fat. The water soluble components of the protein may be substantially coagulated. Substantially all the water and some of the fat may be removed by a first solvent and substantially the whole of the remainder of the fat by a second solvent. The first solvent may be methanol, ethanol or isopropyl alcohol and the second may be trichlorethylene, methylene chloride, carbon tetrachloride, a coal tar naphtha or an aromatic hydrocarbon such as benzene. The protein containing material may be subjected to a pretreatment to remove part of the water therefrom. The treatment may be applied to meat, whale meat and oils, crayfish, offal, bones and liver. An apparatus for carrying out the process consists of a plurality of stages of which at least one comprises a container 11, means 13 for agitating the mixture of liquid and solid placed therein, means for substantially separating the solid from the liquid e.g. a screw press 15, and adapted to direct the liquid to a previous stage or to discharge, and to direct the solid to a subsequent stage or to discharge, as appropriate. The agitating means 13 may comprise a rotating paddle adapted to apply the mixture to the separating means 15 by bucketlike formations 14 at, or adjacent to, the periphery thereof. |
