<P>PROBLEM TO BE SOLVED: To produce natto (fermented soybean) maintaining the content of pinitol contained originally in the soybean. <P>SOLUTION: This method for producing the natto containing pinitol is provided by natto-fermenting the soybean by using bacillus subtillis or natto bacteria deleted with the decomposition activity of the pinitol. The bacillus subtillis or natto bacteria deleted with the pinitol-decomposing activity can be produced by inducing a mutation on the bacillus subtillis or natto bacteria, culturing the bacillus subtillis or natto bacteria in a medium containing a cell wall synthesis inhibitor and as a carbon source, 1 kind of carbon source or a mixture of ≥2 carbon sources selected from a group consisting of myo-inositol, pinitol, D-chiro-inositol, scyllo-inosose and D-chiro-1-inosose and recovering survived bacillus subtillis or natto bacteria. <P>COPYRIGHT: (C)2007,JPO&INPIT |
