PROBLEM TO BE SOLVED: To provide a noodle modifier that has good fluidity and compatibility, can give proper hardness, elasticity (viscoelasticity), texture and smoothness (slippery feeling) to noodles and inhibits noodles from loosening or dissolving after it is treated with hot water or boiled. SOLUTION: The noodle modifier comprises the core particles with an average particle size of >=20 μm coated with pulverized particles with an average particle size of <=20 μm and the powdery modifier is added to the noodle. |
