Sausage or meat curing unit with air circuit and heater is fitted with a water reservoir inside composed of a tube coil supplied with water from mains through a valve controlled in response to unit moisture. - The heater is cut off after reaching required inside temp. and water dripped into evaporator pans in the unit and vaporised from these to the air circuit inside thus dispensing with further heater usage or sudden introduction of cold water. - Conditions in the unit are stabilised, temp. and moisture held at ideal settings and product quality consequently improved.
