A method for preparing the dried leek is provided to improve storage stability, sterilization and taste. A method for preparing the dried leek comprises the steps of steaming raw leek; cooling it with flowing water; cutting the cooled one; dipping the cut one in the thiamine lauryl sulfate solution to sterilize it; and dehydrating and drying the sterilized leek.
