PURPOSE: To obtain the subject new nonreducing glucide compound, having a specific structure containing the trehalose structure and isomaltose structure in the molecule, excellent in properties of promoting proliferation of bifidus bacteria and anticariogenicity and useful in the field, etc., of foods, cosmetics and medicines. CONSTITUTION: This new α-isomaltosyl α-isomaltoside is represented by O-α-D- glucopyranosyl-(1→6)-α-D-glucopyranosyl O-α-D-glycopyranosyl-(1→6)-α-D- glucopyranoside, nonreducing, excellent in properties of promoting proliferation of bifidus bacteria and anticariogenicity and useful as a food, a cosmetic, a medicine, etc. The compound is obtained by reacting an α-glucosidase or further a glucoamylase with an aqueous solution containing trehalose and a starchy substance, producing the α-isomaltosyl α-isomaltoside together with an α- isomaltosyl α-glucoside and/or an α-isomaltotriosyl α-glucoside and collecting the resultant α-isomaltosyl α-isomaltoside. |
